
A big scoop of vanilla ice cream, covered with a chunky apple pie filling (add raisins or pecans for a little extra pizzazz). Top with crunchy wedges of fried 8" flour tortillas(OLE #2710), dusted with cinnamon sugar.
Ingredients
- 6 Olé 8” Flour Tortillas
- Vegetable oil
- 6 scoops Vanilla ice cream
- 6 Apples, peeled, thinly sliced
- ¾ cup Sugar
- 2 tbsp. All-purpose flour
- 1 tsp. Cinnamon, Ground
- ¼ tsp. Salt
- ¼ tsp. Nutmeg, Ground
- 1 tbsp. Lemon juice
- 1 cup Pecans
- ¼ cup Cinnamon & ½ cup Sugar, mixed for dusting
Directions
- Preheat oven to 400 degrees F.
- In a large bowl, add your apples and next 7 ingredients mix thoroughly.
- Place in an oven safe baking dish and bake for 30 minutes.
- Place a large nonstick skillet over medium-high heat lightly cover bottom of skillet with vegetable oil.
- Lightly fry each side of each tortilla until they slightly crunchy. Place each tortilla on a pan covered with paper towels to drain off any grease.
- When cooled cut the tortillas into wedges.
- Scoop your ice cream onto a plate and cover ice cream with your apple pie filling mix.
- Top the filling and ice cream with your crunchy wedges and sprinkle with a little more cinnamon sugar mixture.
